Weekend Cooking (Who am I?!?)

OMG. I am so domestic. I can barely believe it myself. This weekend, I made these:

Chicken Parmesan:



DELICIOUS! The husband thought it was fried chicken. I tried to explain that it was actually super healthy, made from whole wheat bread and parmesan and baked. His response: STOP TALKING. LIE TO ME. IF YOU HAD TOLD ME IT WAS CHURCH'S FRIED CHICKEN, I WOULD HAVE BELIEVED IT. Lesson learned.  Continue to make "healthified" recipes and communicate to the husband as if he is a 5 year old.

Vegetable Quiche

I don't have picture, because my quiche was ugly. Probably because I tried to "healthify" the recipe by omitting crust. But the flavor was good!

I love quiche. The return on the effort is so large. Always completely worth it. I followed the recipe above, except didn't make the crust (I'm tryingggggg to cut down on calories, where I can. It worked here. Don't hate me, crustless quiche is still good!!). So yeah, I went to the farmer's market Saturday morning, bought some amazing mushrooms plus greens plus onion plus peppers and chopped them for this quiche immediately. I find that when I buy fresh produce, I must use it immediately, otherwise often it goes forgotten in my fridge.  Ooops.  Anyway, make quiche.  Awesome for breakfast, lunch, or dinner. And, most importantly, SO EASY.



My family is half Jewish. During Easter/Passover time, Passover somehow always took the priority. I'm not sure why.  Don't get me wrong, year after year we received Easter baskets stuffed with sufficient Peeps and chocolate bunnies.  But I was never exposed to "Easter Dinner" or specialized Easter Ham Cooking or anything like that.  I am using that as the excuse for slacking on any sort of Easter festivities for the husband this year.  Instead, I made him some "Coconut Chicks."  For some reason, though, mine didn't look as cute as Katie's.  But... they were delicious. I found I had to bake them an extra ten minutes (I think my oven is slow. Or something. I'm still learning the chemistry of things...)

Peanut Butter Banana Bread



Make this NOW. So easy. So delicious. I love baking but usually avoid it because I don't want to put myself in the position of having baked goods in my house, available for consumption at all times.  I made this bread anyway. 100% WORTH IT.
